Caribe Fried Shrimp

Yield: 2 to 4 servings

Ingredients:

  • 1 lb. jumbo shrimp, shelled and deveined
  • 1 egg
  • 2 Tbsp. cold water
  • 1 tsp. freshly squeezed lime juice
  • hot peppers to taste
  • 2/3 cups Yellow Corn Meal
  • salt to taste
  • 1 tsp. curry powder
  • ½ tsp. garlic powder
  • ¼ tsp. paprika
  • vegetable oil for deep-frying

Method:
In a small bowl, beat the egg with the water, add the lime juice and crush in the hot peppers. In a shallow dish, combine the cornmeal, salt and seasonings.
Dip the shrimps into the egg mixture and roll in the corn meal until completely coated. Pour the oil into a deep-fat fryer or deep pot and heat. Fry the shrimps until golden brown. Drain on a wire rack and serve.
