Caribe Fried Shrimp

Yield:
2 to 4 servings
Ingredients:
- 1 lb. jumbo shrimp, shelled and deveined
- 1 egg
- 2 Tbsp. cold water
- 1 tsp. freshly squeezed lime juice
- hot peppers to taste
- 2/3 cups Yellow Corn Meal
- salt to taste
- 1 tsp. curry powder
- ½ tsp. garlic powder
- ¼ tsp. paprika
- vegetable oil for deep-frying
Method:
In a small bowl, beat the egg with the water, add the lime juice and crush
in the hot peppers. In a shallow dish, combine the cornmeal, salt and
seasonings.
Dip the shrimps into the egg mixture and roll in the corn meal until
completely coated. Pour the oil into a deep-fat fryer or deep pot and
heat. Fry the shrimps until golden brown. Drain on a wire rack and serve.
